Grandmaman’s Meatloaf

2 pounds of Lean Ground Beef

1 pound of Ground Pork

1 cup of Dry Bread Crumbs

2 Eggs, beaten

⅓ cup of Yellow Onion, finely chopped

¼ teaspoon of Dry Mustard

⅛ teaspoon of Celery Salt (or fresh celery leaves)

⅛ teaspoon of Paprika

2 tablespoons of Fresh Parsley, chopped

Salt & Pepper

  1. Combine ground meat in a bowl, mix in bread crumbs.
  2. Beat eggs well; add onion and seasonings. Blend in with meat mixture.
  3. Preheat oven to 350 degrees. Pack mixture firmly into oiled loaf pan lined with wax paper to form shape. Unmould on to parchment-lined cooking sheet and bake 1.5 hours.
  4. Once cooked, let stand for 10 minutes to absorb juices before slicing.

A third-generation recipe, you won't find a better meatloaf recipe out there. It's a loaf of meat – what more could you want??
