Grown-Up Mushroom Pork Chops

4 boneless Pork Chops

1 small Yellow Onion

8oz of Cremini Mushrooms

275ml of Mushroom Soup

1 tablespoon of Fresh Tarragon (or 1 teaspoon dried)

1 tablespoon of Fresh Thyme (or 1 teaspoon dried)

2 teaspoons of Worcestershire or Fish Sauce

Salt & Pepper

  1. Sauté onion & mushrooms over medium heat until tender.
  2. Add salt, pepper, thyme, and tarragon and cook another 1-2 min. Remove from pan and set aside.
  3. Season pork chops with salt & pepper, add to pan, and brown on all sides.
  4. Add reserved onion, mushroom, & herb mixture back to pan and pour soup over pork chops.
  5. Reduce heat to low, cover, and let simmer 10 minutes or until pork chops are cooked through. Serve over rice or mashed potatoes.

This simple but flavourful recipe is adapted from a dish my dad made regularly during my childhood. The original is as easy as dumping a can of Campbell's soup on top of pork chops, but this version has just a touch more finesse. It's one of my favourite things to make in a pinch or on a budget.
